In December 2022, I attended the IUNS’ 22nd Congress on Nutrition in Tokyo, Japan. The six-day-long event brought together experts in the fields of food security, nutrition, and sustainability to pave the way for resilient food system of the future. My (co-written) abstract entitled ‘Transforming Food Waste into Functional Ingredients: A Dutch Case Study’ was selected for a poster presentation at the conference. Due to all poster sessions being changed to a virtual format, I decided to turn my poster into a brochure that could be distributed throughout the conference. The brochure (as seen below) was designed by Kirstyn Byrne.
